Low Carb Chinese Sautéed Mushrooms with Garlic Chilli recipe

Mushrooms are high in antioxidants and are an excellent source of dietary fiber. While they are low in calories, they are very satiating. So you can eat a whole bunch of them without any guilt. :P

The taste and texture of mushrooms are amazing too. They are easy to cook and require minimal seasoning. Sautéed mushrooms are great as a side dish for your meats, as a salad topper or mixed with your pasta or rice. They are versatile and delicious!



I used mini king oyster mushrooms as that's our favourite but you can use shitake or other mushrooms as well.


Sautéed Mushrooms with Garlic Chilli

Ingredients:

300g mini king oyster mushrooms - sliced thinly
2 cloves garlic - minced
1 shallot - minced
2 red chillies - minced
spring onions - sliced thinly
1 tbsp. light soy sauce
1 tsp. sesame oil
black pepper


Instructions:
  1. Heat cooking oil in a wok over medium-high heat
  2. Toss garlic, shallot and chillies and fry till lightly browned and aromatic
  3. Toss mushrooms, season with light soy sauce, sesame oil and black pepper
  4. Continue cooking and moving the mushrooms until done (about 4 minutes)
  5. Top with spring onions
