Chicken Alphabet Soup recipe - Toddler favourite food



My little 4 year old son is a picky eater. Coupled with the various food intolerance that he has, he falls sick frequently and it is often a challenge getting him to eat.

This alphabet soup is my fall back dish whenever he is sick and has no appetite. Most times the fun alphabets would just perk him up and he would be willing to eat some.

With the soft carrots, tender chicken pieces, in tasty and healthy clear soup, I know something good is going into his little body.


Chicken Alphabet Soup

Ingredients:

1 tbsp. butter
2 chicken breasts - cubed
1 onion - chopped finely
2 cloves garlic - minced
2 carrots - cut to bite-size pieces
1 bowl alphabet pasta

Instructions:
  1. Heat butter in a large soup pot, fry onion and garlic until translucent
  2. Toss the chicken cubes and brown them
  3. Season with salt and pepper
  4. Add 1.2 litre of water, bring to boil then simmer for 1 hour
  5. Add carrots 15 minutes before the hour mark
  6. 6 minutes before serving, add alphabet pasta and boil, uncovered, until the pasta is done
