My little one is intolerant to cow milk and most milk related products. As much as my family loves our milk and cream and cheese, I have to be very careful in incorporating them into my cooking. Recently I discovered that my little one could take coconut milk. He's had mild curries, coconut rice and coconut cream with no problem, and he loved the taste! This creamy chowder is inspired by him. It is rich and full of flavours, packed with the natural goodness of chicken and various veggies, and thickened with coconut milk. Absolutely comforting and delicious! I use my thermal cooker for my soups as it saves me time and produces lovely broth. But you can use a slow cooker (just add the coconut milk at the end of cooking) or cook on the stove top by simmering the chicken first to make the soup base before adding the rest of the ingredients. My family loves our soups. A great big bowl of soup is just so comforting and homey. It keeps us warm and satisfied especially in this dreary wet season. This beef and barley soup is another classic Chinese recipe. It is loaded with chunks of tender, juicy beef, plump grains of barley, and healthy mixed vegetables. Today I am combining 3 of my favourite healthy ingredients to make this lovely soup. First up is the turmeric. Many research has shown that turmeric contains powerful anti-inflammatory and antioxidant properties. It also gives a delicious, distinctive flavour to this soup. Second is the cabbage. Cabbage is an excellent source of natural antioxidants, vitamins and dietary fiber. They are also extremely low in fat and calories, and very satiating. Finally, sundried tomatoes and fresh tomatoes. I am always looking for ways to make cooking simpler and less time-consuming. Who likes to spend hours slaving over the hot stove in our sunny island... definitely not me. It is perfect for making soups and stews. One of the greatest features of the thermal cooker is that it is an amazing one pot wonder. I can brown the meat, saute the vegetables, then add in all the liquid right in one pot. When I come back after a good 6-8 hours, what I have is a rich, warm, thick stew that smells divine. Have you heard of the cabbage soup diet? It's basically a quick fix solution to lose weight and to lose it fast. You spend a week, and no more, eating unlimited amounts of this low-fat, low-calorie cabbage soup. This diet should NOT be done for more than 7 days. The classic cabbage soup has no butter and no chicken, but uses chicken stock to make the meal very low calorie. But I find the taste very blah.... And I feel peckish the whole day if I have it for lunch. I decided if I'm going to try any sort of cabbage soup diet, it has to taste great. It has to be satiating to keep me going the whole day. I am not complaining though, I enjoy these leftover makeovers! 😋 This recipe is a simple and satisfying way to transform the ham into a hearty meal.
