Christmas Leftover - Chicken Ham Beans Stew recipe

Image
Even though Christmas was 5 days ago, I am still trying to clear my fridge from leftover ham and turkey. I am not complaining though, I enjoy these leftover makeovers! 😋 This recipe is a simple and satisfying way to transform the ham into a hearty meal. Start by simmering chicken thighs and beans to create a savoury broth. I use my favourite thermal cooker so I can cook in the morning and forget about it till the afternoon, when I add some chopped vegetables and diced ham. (If you do not have a thermal cooker, you can use a slow cooker instead). This warm and comforting stew is great for the whole family. Serve with rice or crusty bread for a complete meal. But I enjoy this stew by itself as it is filling enough without loading on more carb! Chicken Ham Beans Stew Ingredients: ¾ cup (80g) dried white beans - I use black eye beans 1 kg chicken thighs bone-in 1 bowl diced leftover ham 1 tbsp. butter 1 onion - chopped finely 4 cloves garlic - minced 1 bay le

Kids Craft - Folded Paper Drawings

Image
Following the fun the little brother had with his growing caterpillar  drawing, the 2 older brothers quickly made their own versions. This was their idea but I had to draw it as it was tricky to get the proportion just right. All is not what it seems in the sea... The rest were drawn by the 2 of them. Psyduck that turned into alien. Hidden family. And if I have to pick one FAVOURITE, it will have to be this one below!! Lol. 💙

Christmas Leftover - Turkey Pasta with Mushroom Cream Sauce recipe

Image
Now that Christmas has come and gone, I can foresee us having leftover turkey and ham for the next few days. But it doesn't have to be boring! With a little bit of makeover, we can transform the Christmas leftovers into something new and delicious. This is what we had when some relatives decided to pop over one day. Lucky for me, I had a fridge full of food so getting dinner ready on the table was a breeze. I made this really simple pasta with the leftover turkey and what I have in my pantry. It was so rich and creamy. Turkey Pasta with Mushroom Cream Sauce Ingredients: 1 pack (375g) pasta 4 cloves garlic - minced 1 onion - chopped finely 1 bowl of shredded leftover turkey 1 can mushroom - sliced thinly a handful of frozen peas 1 can (170g) double cream 1 tbsp. dijon mustard a pinch of nutmeg chopped basil Instructions: Cook the pasta in boiling salted water, following the packet instruction. Drain, reserving 1 cup of the cooking liquid Meanwhil

Christmas Dinner Party 2016

Image
Merry Christmas from our family to yours! Kids' favourite corner - mini quiche, cheese rolls, cocktail sausages, chocolates, gummies and chips. What's a party without drinks... 😜 The spread - roast turkey with cranberry sauce, ham, roast vegetables, red cabbage...  and lasagne, toad in the hole, roast potatoes and fried prawns... Dessert time! Chocolate pudding with custard, red velvet log cake... Love it or hate it. You just gotta have the rich and fruity Christmas pudding, served with a good dose of brandy and vanilla cream. Delicious food, endless supply of drinks, wonderful company! It was a lovely night. Santa came visiting last night too! XOXOXO 💞

Kids Art - Folding Paper Growing Caterpillar

Image
There are 2 things that my little 3 year-old boy loves the most. One is his caterpillar soft toy that goes with him everywhere... he takes it out in the car, he sits and has dinner with it, he sleeps with it, he looks for it whenever he's sad and when he's happy. He pats it when he wakes from sleep. He cries in the middle of the night when he can't find it in the dark. He just loves his caterpillar to bits! The second thing that he loves is the cable car. We had an annual membership for cable car rides that we got over a year ago. We could take the cable car as and when we want to and as many times as we like. It became the most used annual membership of anything we've ever had as the little one is always asking to go on it. He loves the cable car so much. I think to the point of obsession! He talks about the cable car to anyone and everyone who cares to listen. Non Stop! He loves looking at cable cars. He watches YouTube videos about cable cars. He makes cable cars

Kids Craft - Paper Mache Animals Painting

Image
I snapped these up when I saw them on sale at the Popular Bookfest. They are made of sugarcane fiber, so they are environmentally friendly and non toxic. The texture is a bit like hardened paper, this means that they are easy to paint but yet more durable than paper. Perfect for my 3 boys! I wished I had gotten more as they turned out to be such great fun. The little one was the first to have a go at it. He chose the caterpillar obviously! He insisted that the colours have to match his favourite caterpillar toy exactly. The 2 older brothers quickly followed and painted theirs. The first layer was a breeze. Here they are after the first day. They were so excited to add on the accents on the second day. This is the fun part where they can blend and add on dots, stripes and whatever they fancy... I also managed to work on the first layer of my butterfly. We added some final touches and finished them off on the third day.  I think we all di

Prawns with Garlic Sweet Soy recipe

Image
The boys usually wouldn't touch any of the seafood in the restaurants as they hate peeling them and getting their hands all dirty. This is great as the prawns have been peeled and deveined beforehand. Without the shells the prawns soak up all the cooking juices. My boys love mixing their rice in this garlicky sweet soy goodness! The key to any stir-fry is that it has to be done very quickly, so have everything on hand and ready to be thrown in. Prawns with Garlic Sweet Soy Sauce Ingredients: 200g of medium prawns 2 cloves garlic - minced 1 tbsp. light soy sauce 1 tsp sugar 2 tbsp. water salt and pepper chopped basil Instructions: Peel and devein the prawns Mix the light soy sauce, sugar and water in a small bowl Heat oil in a frying pan over medium high heat Toss in the garlic until fragrant Cook the prawns in a single layer Season with salt and pepper sparingly Flip the prawns until both sides have turned pink Quickly pour the light soy sauce mi

Fun recipe for Kids - Marie Biscuits Ball

Image
I remember making these with my cousins when I was little. We had so much fun crushing the biscuits and rolling them into little balls. We would make them and eat them all up in one seating. Now my boys make them and we have them for our afternoon snack. They are a fantastic sweet treat - simple, satisfying and so fun to make! Ingredients: (per child - to make about 8 balls) 4 marie biscuits 1 tsp condensed milk water chocolate rice Method: 1. Add the condensed milk to the marie biscuits in a bowl. Then add some water bit by bit to the bowl so that the biscuits can be broken and mashed up into a smooth dough. 2. Scoop by the spoonful and roll into a ball. Set aside. 3. Roll each ball in some chocolate rice until well coated. 4. Done! And ready to be eaten. Enjoy!
