Baked Meatballs with Oats in Tomato Sauce recipe

This meatball recipe is perfect for days when you have a little time in your hands and want to make something that the whole family will love. They take a little time to put together, but the result is so worth it. These meatballs are tender, juicy, delicious, and big! They are super filling and satisfying on their own. Although of course, if you love your carb you can serve them up on a bed of spaghetti or with a side of mash :P I use rolled oats and golden flax seed meal to bind them together. This gives the meatballs a nice crunch and texture.   Oats are highly nutritious, loaded with vitamins, minerals and antioxidants. They are also high in dietary fiber and complex carbohydrates, which make them extra filling. I absolutely love the taste and texture of oats. I am trying to switch my choice of carb to oats more and more these days. No need to fry the meatballs beforehand. Everything goes in the oven! This is another fantastic low carb recipe that I love. It is delicious and creamy, filling and healthy! Cauliflower is truly a wonderful, mild tasting vegetable that is so versatile. Combined with some hard boiled eggs and mayonnaise , you really can't go wrong with this refreshing, crunchy, yummy salad! A great substitute to the traditional potato salad, minus all the carb! 😉 Feel free to adjust the amount of mayonnaise to your liking, and season to taste. Cauliflower Egg Salad Ingredients: ½ head cauliflower - cut into small florets 1 green bell pepper - cut into 1 cm cubes 1 small red onion - sliced thinly 4 eggs - hard boiled and roughly chopped 2 spring onions - sliced thinly salt and black pepper 2-3 tbsp. mayonnaise Instructions: Bring a pot of salted water to boil, toss cauliflower and boil until desired doneness. I like mine a little crunchy so it is about 5 minutes. An incredibly fun and simple recipe requested by the second son. My second son loves to read. He reads anything and everything, from newspapers to comics to non-fiction books. Over Christmas I got him some books - the Guinea Pigs series. This series definitely didn't disappoint and got him completely hooked. The fun part about this series is the recommended activities at the back of each book. This particular book had this recipe and he had been clamouring to try it out! What better way to use up over-ripe bananas than by making breakfast pudding loaded with sweet bananas? :) My kids love eating bananas - not any kind of bananas, but these tiny Malaysian bananas that are incredibly sweet and go in one bite! I kind of overdone and bought way too much the last time we were in JB and now here they are sitting on the counter and bugging me! This banana bread pudding is easy to make, yummy and creamy, great for breakfast and snack time. Add a bit of custard or blueberry jam and it is satisfyingly delicious! Ever since going on a low-carb lifestyle for the past year or so, I am always looking for ways to prepare simple, low carb dishes that can be enjoyed by the whole family. Dishes that are packed with protein and fiber, filling enough without the need for extra rice. And they must obviously taste wonderful! Minced pork is a sure winner in my family. One afternoon after school, the 3 boys huddled in the corner of their room quietly. I get really suspicious when all is quiet in the house. But on some days, I treasure my moments of peace much more than satisfying my curiosity. If I don't hear anyone crying that's good enough for me. :P My hour of peace was shattered when the 3 of them burst out of their room. Looking like this! I really have to give them credit for their creativity here. 😂 I put a big cardboard box in the kitchen that I wanted to throw away a few days ago. When the boys saw it, they hid it under their bed for "later use" they said. I guess it is for times like these. Banana Oats Breakfast Cookies (2 ingredients) recipe

Most of the recipes I post here are quick and easy, with minimal ingredients. The way I like it for fuss-free meals that are kids-friendly. But this one here is incredible easy and requires only 2 ingredients! Sounds incredulous, but true. Bananas + Oats. That's it! And these cookies taste wonderful and are healthy. There is no processed ingredients, no sugar, no flour and takes less than 20 minutes to make! These cookies make a great quick breakfast or a healthy snack, and perfect to carry around as an energy booster during the day. My toddler son loves eating this for breakfast. These cookies are crispy on the outside and chewy on the inside, a bit like banana bread. I used to buy lots of granola from the supermarket. Until I examined carefully what is in the ingredients list. I was horrified to discover most of the store-bought granola contains a whole lot of sugar, unhealthy fats and oils, and unnecessary ingredients.  For a fraction of the cost, I can easily make granola at home! Making it myself also allows me to control the amount of sugar that goes in and other ingredients that I want. This stove top granola recipe takes about 15 minutes to put together, incredibly tasty and healthy. This recipe is just a starting point, you can change it up, experiment with different flavours and put in more or less of whatever ingredients you have on hand or love. It is easily adaptable according to your taste. I like to use coconut oil because it’s full of nutrients and adds a lovely fragrance to the granola, but you can use any healthy oil you have.
