Nourishing Ginger Wine Clay Pot Chicken recipe





It all started with the oldest boy coming home from school with blocked and stuffy nose one day. Within 3 days, all 3 boys are sporting runny nose, itchy throat and cough, and high-grade whinging. Life can be quite miserable with 3 sick children in the house. Between the cleaning of mucus, spooning various medicines and vitamins, breaking up fights and putting up with restless kids being cooped up at home, I am so craving for a good bowl of something warm and comforting.

What's better than good old nourishing chicken at times like these? Well maybe a large chunk of melting lava chocolate cake... but it's just too bad that is not going to fulfil all of our nutritional needs!

So here comes my recipe for a good bowl of nourishing ginger chicken, great for the body and soul. The broth is full of warmth from the ginger and Chinese wine, which is said to help boost the immune and digestive systems, and the chicken so deliciously juicy and tender.



The clay pot is perfect for this recipe as it retains heat well, cooks the chicken slowly and evenly without evaporating much of the liquid so that there's ample yummy nutritious broth at the end of it.

Perfect when everyone is feeling under the weather!

Feel free to remove the skin on the chicken to make it healthier but my boys just love the chicken skin.



Nourishing Ginger Wine Clay Pot Chicken

Ingredients:

6 pieces chicken thighs bone-in
3 cloves garlic - minced
2 inch ginger - sliced
1 tbsp. sesame oil
2 tbsp. light soy sauce
1 tbsp. oyster sauce
3 tbsp. Chinese cooking wine
pepper

Instructions:
  1. Marinate chicken in sesame oil, soy sauce, oyster sauce, wine and pepper for at least 30 minutes
  2. Heat sesame oil over low heat in clay pot, toss in ginger and garlic, cook for 30 seconds
  3. Put in chicken skin side down, reserving the marinate for later, and cook till lightly browned
  4. Flip the chicken, pour all the sauce in, add ½ cup water
  5. Cover and simmer over low fire for 20 minutes until chicken is tender, adding more water if required
  6. Serve warm over rice
