Banana Oats Breakfast Cookies (2 ingredients) recipe



Most of the recipes I post here are quick and easy, with minimal ingredients. The way I like it for fuss-free meals that are kids-friendly. But this one here is incredible easy and requires only 2 ingredients!

Sounds incredulous, but true. Bananas + Oats. That's it! And these cookies taste wonderful and are healthy.

There is no processed ingredients, no sugar, no flour and takes less than 20 minutes to make!

These cookies make a great quick breakfast or a healthy snack, and perfect to carry around as an energy booster during the day.

My toddler son loves eating this for breakfast. These cookies are crispy on the outside and chewy on the inside, a bit like banana bread. And they are packed with good healthy stuff so I don't feel guilty feeding my son cookies for breakfast! 😉


This recipe is perfect to use up over-ripe bananas.

I added some cinnamon and cranberries, but this is totally optional. Or you can add any combination of berries, chocolate chips, nuts or seeds that you have or love!


Mix them well.


Bake in the oven.



And done!

Banana Oats Breakfast Cookies

Ingredients:

3 over-ripe bananas
1½ cups whole rolled oats
salt (optional)

Optional add-ins:
  • ½ tsp cinnamon
  • a handful of cranberries or chocolate chips or chopped walnuts or any combination you love

Instructions:
  1. Preheat oven to 180℃
  2. Mash bananas until they are soft and gooey
  3. Add in oats and any optional add-ins, stir until well combined
  4. Cover baking tray with parchment paper and spray with oil
  5. Using a tablespoon, drop dough onto baking tray and flatten
  6. Bake for 12-15 minutes until cookies are set
  7. Remove from oven and cool
  8. Keep in airtight container for a few days, or in the fridge. They can be reheated or eaten cold.
