Low Carb Cabbage Minced Pork and Red Pepper Stir Fry recipe
Ever since going on a low-carb lifestyle for the past year or so, I am always looking for ways to prepare simple, low carb dishes that can be enjoyed by the whole family. Dishes that are packed with protein and fiber, filling enough without the need for extra rice. And they must obviously taste wonderful!
Minced pork is a sure winner in my family. With the addition of finely shredded cabbage and red bell pepper, we've got a colourful, healthy, low carb dish that is incredibly flavoursome and satiating. Even my kids loved it!
Cabbage Minced Pork and Red Pepper Stir Fry
Ingredients:
300g minced pork
1 red onion - sliced thinly
1 red bell pepper - sliced thinly
½ head cabbage - sliced thinly
3 cloves garlic - minced
1 tsp minced ginger
2 tbsp. light soy sauce
1 tbsp. oyster sauce
1 tbsp. sesame oil
salt and pepper
spring onions
Instructions:
Heat cooking oil in a large wok over medium high heat- Fry garlic and ginger until fragrant, followed by red onion
- Season pork with salt, pepper and light soy sauce, add into wok and cook until no longer pink
- Toss in cabbage and red pepper into wok
- Add oyster sauce and sesame oil, continue cooking until vegetables are cooked
- Top with spring onions
