Baked Meatballs with Oats in Tomato Sauce recipe



This meatball recipe is perfect for days when you have a little time in your hands and want to make something that the whole family will love. They take a little time to put together, but the result is so worth it.

These meatballs are tender, juicy, delicious, and big! They are super filling and satisfying on their own. Although of course, if you love your carb you can serve them up on a bed of spaghetti or with a side of mash :P



I use rolled oats and golden flax seed meal to bind them together. This gives the meatballs a nice crunch and texture.  

Oats are highly nutritious, loaded with vitamins, minerals and antioxidants. They are also high in dietary fiber and complex carbohydrates, which make them extra filling. I absolutely love the taste and texture of oats. I am trying to switch my choice of carb to oats more and more these days.



No need to fry the meatballs beforehand. Everything goes in the oven!


You really can't go wrong with this meatballs with oats recipe. It may take slightly longer time than my usual recipes, but still very easy to make and so scrumptious. My family loves it!


Meatballs with Oats in Tomato Sauce

Ingredients:

For the meatballs:
  • 600g minced beef
  • ¾ cup rolled oats
  • 1 cup milk
  • 1 egg
  • 2 tbsp. golden flax seed meal
  • 2 cloves garlic - minced
  • ½ onion - chopped finely
  • salt and pepper
For the sauce:
  • 2 cloves garlic - minced
  • ½ onion - chopped finely
  • salt and pepper
  • 1 can (411g) diced tomatoes
  • 2 tbsp. Worcestershire sauce
  • 2 tbsp. tomato sauce
grated cheddar cheese

Instructions:
  1. Make meatballs by combining all the meatball ingredients, stir until well combined then roll mixture into balls (I use an ice cream spoon)
  2. Place on a well oiled baking tray
  3. Bake in a preheated oven at 180 ℃ for about 30 minutes until browned
  4. Meanwhile, to make sauce: heat a little oil on a sauce pan, fry garlic and onion until fragrant, add canned tomatoes, Worcestershire sauce, tomato sauce, salt and pepper. Stirring until all the tomatoes have broken down
  5. When the meatballs have browned, drizzle sauce over them, top with cheddar cheese and put back in the oven for another 10-15 minutes until cooked through
