Easy Popcorn Chicken recipe

The kids love their popcorn chicken. They always asked for them in KFC. The older one used to buy them a few times a week from the school canteen, until the school stopped selling them as they are now promoting healthy eating habits in school. 🙌

Those store-bought popcorn chicken are addictive but so unhealthy. They are too oily, full of preservatives, and all you get are little morsels of chicken parts which are coated in too much flour and flavourings.

My recipe is much healthier, very easy, and still gives incredibly tasty popcorn chicken. They are deliciously tender inside and crispy on the outside. We can all enjoy them now without much of the guilt. And the boys declared that these are THE BEST popcorn chicken!

Popcorn Chicken

Ingredients:

250g chicken thigh - cut into bite-sized pieces
2 tbsp. light soy sauce
1 tsp oyster sauce
1 tbsp. fresh ginger juice
pepper
corn flour

Method:

  1. Marinate chicken pieces in light soy sauce, oyster sauce, ginger juice and pepper for at least 30 minutes
  2. Heat some cooking oil in a frying pan over medium heat
  3. Coat chicken pieces in corn flour evenly
  4. Deep-fry the chicken in batches until they turn golden brown. Do not overcrowd the pan, so that each piece gets cooked thoroughly
  5. Drain them on a wire rack or kitchen tissue
