Leftover Turkey Fried Rice recipe


I love fried rice. It is my ultimate comfort food that reminds me of home and childhood. Back in Indonesia, we grew up eating lots of fried rice (nasi goreng) as it is so commonly available.

Ever since I go low-carb I've hardly touched rice at all. But I can never resist a good bowl of this fried rice!



The leftover turkey we have is perfect for this fast, easy and comforting treat.

I like to use lots of garlic and shallots for my fried rice. They just elevate the flavour and fragrance to this dish. The sweet corn adds an extra crunch and sweetness. No greens in sight as my boys are so picky, but I'm sure adding some spring onion or cilantro would have been great.


Leftover Turkey Fried Rice

Ingredients:

2 cups cooked white rice - preferably a day old so it is slightly dry
1 bowl shredded leftover turkey
½ cup frozen sweet corn
2 eggs
4 cloves garlic - minced
3 shallots - minced
2 tbsp. oyster sauce
2 tbsp. kecap manis (sweet soy sauce)
1 tsp. light soy sauce
salt and pepper


Instructions:

  1. In a large non-stick wok, heat up cooking oil over medium-high heat, then add garlic and shallots and fry till fragrant
  2. Season with salt and pepper
  3. Mix light soy sauce into the eggs, then drop them into the wok, cooking and mixing until slightly firm
  4. Lower the fire, add rice into the wok, season with oyster sauce and kecap manis
  5. Toss in turkey and corn, continue cooking and turning until everything is piping hot, browned and slightly crispy
