Slow Roasted Tomatoes recipe




Slow roasting gives these tomatoes a more intense, rich flavour.

We had this together with our Christmas leftovers.




Slow Roasted Tomatoes




Ingredients:

4 ripe tomatoes - cut to halves
3 cloves garlic - minced
chopped basil
olive oil
balsamic vinegar
salt and pepper






Instructions:
  1. Preheat oven to 160 ℃
  2. Place tomato halves on a large baking dish
  3. Drizzle with olive oil and vinegar
  4. Sprinkle with salt and pepper, garlic and basil
  5. Roast for 1 hour
